Ingredients:

1/2 cup North Coast Organic Applesauce

1/4 cup brown sugar

1/4 cup white sugar

2 eggs

1 teaspoon vanilla

2 1/2 cups flour

1 tablespoon baking powder

1 teaspoon apple pie spice

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup cold salted butter, cut into cubes

Directions:

Preheat oven to 375° F. Line a baking sheet with parchment paper.

Add the apple sauce, brown sugar, white sugar, eggs, and vanilla to a bowl and whisk until well combined.

In a separate bowl add the flour, baking powder, apple pie spice, salt, and cinnamon and mix well. Slowly add the dry ingredients into the wet ingredients and combine well.

Add the butter to the dough and use a pastry cutter to cut the butter into the dough. Once the butter has been incorporated into the dough, add the bowl of dough to the refrigerator for 30 minutes.

When the dough has cooled, use your hands to form a flat disc about 5-6 inches in diameter and 1 inch high. Using a knife coated in flour, cut the dough into 6 wedges. Use the knife to slightly separate the wedges from each other.

Bake for 25-30 minutes. Rest on a cooling rack for 30 minutes prior to serving.
