Potato Latkes with North Coast Applesauce Recipe

Equipment
- 1 Food processor
- 1 Colander
- 1 12" skillet
Ingredients
- 1 pound potatoes we used half purple potatoes and half russet potatoes
- ¾ cup finely chopped onion
- 2 eggs
- ½ cup chopped Italian parsley
- ½ tsp salt
- ¾ cups olive oil
- North Coast applesauce and parsley for serving
Instructions
- Preheat oven to 250°F.
- Peel potatoes and grate through a food processor.
- Soak potatoes in cold water for 1-2 minutes before draining in a colander.
- With a spatula, press out as much liquid as possible.
- Transfer potato mixture to a bowl and stir in eggs and salt.
- Heat 1/4 cup oil in a 12-inch skillet over moderately high heat until hot but not smoking.
- Working in batches of 3-4 latkes, spoon 3 tablespoons of potato mixture per latke into skillet, spreading into 3-inch rounds.
- Reduce heat to medium and cook until undersides are browned, about 5 minutes.
- Turn latkes over and cook for another 5 minutes or until evenly browned on both sides.
- Transfer to paper towels as each batch is finished to drain and season with salt.
- Add more oil to skillet between batches.
- Keep latkes warm in the oven until all batches are complete.
- Top with North Coast applesauce and Italian parsley and enjoy!
