North Coast Apple Cinnamon Frittata

Ingredients

Sauce

  • 2 tbsp honey
  • 2 tsp vanilla
  • 1.5 tsp cinnamon
  • 2 tbsp brown sugar or coconut sugar
  • pinch salt

Instructions

  • Preheat oven to 375°.
  • Whisk together eggs, cinnamon apple sauce, honey, vanilla and 1/2 tsp. cinnamon thoroughly.
  • Using 1 tsp. coconut oil or butter lightly grease a baking dish.
  • Melt 3 Tbsp. of coconut oil or butter in a sauce pan with 2 Tbsp. of brown or coconut sugar, 1 tsp. of cinnamon and a pinch of salt. Heat and stir until combined, set aside.
  • Layer sliced apples into baking dish pouring a small amount of beaten egg mix and melted cinnamon / sugar over top. Continue to do so until apples are all used and pour remaining egg mix over top.
  • Pour remaining melted cinnamon / sugar over top.
  • Bake for 35-40 minutes* until cooked through.
