North Coast Apple Cinnamon Frittata
Ingredients
- 1 tsp coconut oil or 3 tbsp of butter
- 3 apples cored and thinly sliced
- 10 eggs beaten
- ⅓ cup North Coast Cinnamon Apple Sauce
Sauce
- 2 tbsp honey
- 2 tsp vanilla
- 1.5 tsp cinnamon
- 2 tbsp brown sugar or coconut sugar
- pinch salt
Instructions
- Preheat oven to 375°.
- Whisk together eggs, cinnamon apple sauce, honey, vanilla and 1/2 tsp. cinnamon thoroughly.
- Using 1 tsp. coconut oil or butter lightly grease a baking dish.
- Melt 3 Tbsp. of coconut oil or butter in a sauce pan with 2 Tbsp. of brown or coconut sugar, 1 tsp. of cinnamon and a pinch of salt. Heat and stir until combined, set aside.
- Layer sliced apples into baking dish pouring a small amount of beaten egg mix and melted cinnamon / sugar over top. Continue to do so until apples are all used and pour remaining egg mix over top.
- Pour remaining melted cinnamon / sugar over top.
- Bake for 35-40 minutes* until cooked through.

*Baking times will vary slightly depending on baking dish used.
