2 cups all-purpose flour

3 tablespoons brown sugar

2 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup milk (dairy or almond)

2 eggs

1 cup North Coast applesauce

2 tablespoons butter, melted

1/4 cup blueberries

 

Mix the flour, sugar, baking powder, cinnamon, and salt to a large bowl and stir to combine.
One at a time, add the remaining wet ingredients to the bowl mixing after each addition.
Heat a non-stick griddle or pan over medium heat. Pour 1/4-1/2 cup (depending on how large you’d like your pancakes) of batter onto the griddle. Cook for 2-3 minutes or until bubbles begin to form. Flip, and cook 2-3 minutes more or until bottom reaches desired golden brown.

Serve with apple syrup or traditional maple syrup and blueberries.
