Ingredients:

1 cup North Coast Organic Applesauce

1/4 cup melted coconut oil

1 egg

1/3 cup maple syrup

1 tsp vanilla extract

1 cup old fashioned whole rolled oats

1 cup all-purpose flour

1/2 tsp baking soda

1/2 tsp salt

2 tsp cinnamon

Glaze:

3/4 cup powdered sugar

1 tbsp milk

1/4 tsp cinnamon

Directions:

Preheat oven to 350° F and line a baking sheet with parchment paper.

In a mixing bowl, whisk together apple sauce, coconut oil, egg, maple syrup and vanilla until smooth. In a separate bowl, stir together oats, flour, baking soda, salt, and cinnamon until well incorporated.

Combine wet and dry ingredients, stirring well. Use a cookie scoop to portion dough onto cookie sheet.

Bake for 12-14 minutes, until light golden brown. Remove from oven and let cool completely before topping with glaze.

To make glaze, whisk together powdered sugar, cinnamon, and milk until smooth. If it is too thick, add 1 tsp more milk at a time until it reaches desired consistency. Drizzle glaze over cooled cookies.
