Applesauce Crepes with Honey Ricotta Recipe
This Applesauce Crepe with Honey Ricotta recipe is made with cinnamon crepes, North Coast Organic Applesauce, organic ricotta and raw honey. They’re super delicious and healthy at the same time. A perfect option for a school lunch or an afternoon snack.

Ingredients
For the batter:
- 2 eggs
- 1 cup of flour
- ¾ cups whole milk or 2%
- ½ cup water
- 3 tablespoons melted unsalted butter +more for brushing the skillet
- 2 tablespoons sugar
- 1 teaspoon vanilla
- ¼ teaspoon cinnamon
For the filling:
- 2 cups North Coast Organic Applesauce
- 2 cups Organic Ricotta
- 2 tablespoons Raw Honey +more for drizzling
Instructions
- In a blender combine all the batter ingredients and process on high until smooth.
- Place the crepe batter in the refrigerator for 1 hour.
- This allows the bubbles to subside so the crepes will hold together better during cooking.
- Heat a small non-stick skillet over medium heat.
- Brush it with butter.
- Pour one ladle (about ¼ cup) of batter onto the skillet and swirl around to cover all bottom of the skillet with crepe batter
- Cook it for approximately 1 minute, then flip it to briefly cook opposite side.
- Continue with the remaining batter.
- In a bowl, combine ricotta & honey and mix well.
- Once all the crepes are cooked, assemble them with filling.
- First add 2 tablespoons of your mixed honey ricotta, then 2 tablespoons of North Coast Organic Applesauce and then roll or fold crepes.
- Once all the crepes are finished you can drizzle them with more honey.
