If you’re looking for a sweet treat that’s as unique as it is delicious, then look no further than this Apple Cider Fudge Recipe! This creamy, smooth fudge is made with apple cider and packed full of flavor. Learn more with North Coast Organic. 

Ingredients:

  • 1/2 cup raw cacao powder + 1 Tablespoon for dusting
  • 1/2 cup coconut oil, at room temperature, not melted
  • 1/3 cup reduced North Coast Apple Cider, *see recipe below
  • 1/3 cup hazelnuts
  • 1 teaspoon vanilla extract
  • Cacao nibs for topping, optional

Directions:

Combine all ingredients in a food processor and pulse for about 30 seconds. Scrape down sides with a spatula. Work in 30 second intervals, scraping in between for a total of three minutes or until the mixture is smooth and creamy, but not too shiny. The hazelnuts should look like coarse sand, not any bigger. If you overmix, the coconut oil will begin to separate from the other ingredients and your mixture will start to look glossy. Do not let this happen. Line a small 5” x 8” baking dish or rectangular Tupperware container with parchment paper. Pour in the fudge mixture and smooth it out with a spatula or knife. Sprinkle with additional cacao powder or cacao nibs if using. Refrigerate until hard and solidified. Transfer the parchment paper to a smooth surface and cut fudge into very small squares using a sharp knife. This recipe is very rich, small pieces go a long way!

Store fudge in an airtight container in your refrigerator. Can also be frozen.

*North Coast Reduced Cider – this recipe can be reduced to half

 

Pour 2 gallons of North Coast Apple Juice or Cider (same thing) into a large soup or stockpot. Bring to a boil on high heat. Once boiling, reduce the heat slightly. You’ll want to keep a constant rolling boil. Boil for 6 hours, giving it a good stir every hour or so. You will end up with about 32-48oz of pure, sweet apple syrup goodness. 100% organic and 100% apple!
