Ingredients:

 

3 tablespoons butter

 

1 cups diced purple onion

 

3 cups leftover North Coast corned beef (chopped)

 

3 cups leftover boiled potatoes (diced)

 

Handful of chopped Italian parsley

 

Salt and freshly ground pepper

 

Directions:

 

Heat butter in a large cast iron skillet on medium heat. Add the onion and sauté for a few minutes just until translucent. Add potatoes and corned beef, spreading the mixture out evenly across the pan. Press down with a spatula. Increase the heat to medium high and cook until browned, then flip, and press down again. Do not stir and disrupt. If you hear them sizzling, this is good. Continue to cook until browned on both sides. Stir in parsley, salt and pepper to taste, and ENJOY!
