Ingredients:

  • 2 racks of ribs with the silver skin removed
  • 1 cup Spice Rub (Recipe Below)
  • 1 cup Brown Sugar
  • 1/4 cup Worcestershire Sauce
  • 2 cups North Coast Apple Cider
  • 1/3 cup North Coast Apple Cider Vinegar

Spice Rub:

  • Combine ¼ cup paprika with 1 TBSP of the following:
  • freshly ground black pepper
  • salt
  • celery salt
  • brown sugar
  • cayenne pepper
  • garlic powder
  • dry mustard
  • ground cumin

Instructions:

  1. Place ribs in a large roasting pan and generously coat with the spice rub mixture. Refrigerate for eight hours or overnight.
  2. Pre-heat the oven to 275 degrees. Take ribs out of the refrigerator and pour the apple cider, apple cider vinegar and Worcestershire sauce into the bottom of the pan being careful not to wash away any  of the spice rub. Cover with aluminum foil and place in oven for 3 hours or until meat starts shrinking back from the bones.
  3. To make grilling sauce, gently place ribs in another pan and strain the pan drippings with a mesh strainer into a gravy separator. Once separated, pour remaining liquid into a medium saucepan and bring to a boil. Once boiling, reduce heat and simmer uncovered until sauce thickens 15-20 minutes stirring often to ensure it doesn’t burn. Set aside.
  4. Prepare charcoal grill for indirect grilling at 350 degrees. Place ribs on the grill, cover, and cook for 45 minutes. Remove from heat and allow to stand for 15-20 minutes below slicing. Once sliced, drizzle with prepared North Coast grilling sauce and enjoy!
