Apple Sauce Pound Cake

Ingredients
- ½ cup unsalted butter softened
- ¾ cup granulated sugar
- 3 large eggs
- ¼ cup North Coast Organic Apple Sauce
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 ¼ cups all-purpose flour
- ½ tsp baking powder
- Pinch salt
- ½ tsp cinnamon
- Fresh berries and powdered sugar
Instructions
- Preheat oven to 350˚F and grease a 9x5” loaf pan.
- Cream butter and sugar with an electric mixer for 2 minutes, until light and fluffy. Add eggs and continue mixing. Add the apple sauce, vanilla and lemon zest.
- In a separate bowl, mix together the flour, baking powder, salt and cinnamon. Slowly add to the wet mixture, mixing until just combined.
- Transfer to loaf pan and bake for 45-55 minutes or until toothpick inserted in the center comes out clean. Cool completely before slicing.
- Top with powdered sugar and berries before serving.
