Cinnamon Apple Loaf Recipe

Ingredients
- 3 cups oat flour
- 1/2 cup dairy free yogurt
- 1/2 cup North Coast APPLESAUCE
- 1/2 cup maple syrup
- 1 1/2 cups almond milk
- 2 apples chopped
- 2 flaxseed eggs 2 tbsp flaxseed + 6 tbsp water
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 tbsp North Coast Apple Cider Vinegar
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp salt
- 2 tbsp coconut sugar
- 1 tbsp chopped pecans optional for topping
Yogurt Frosting
- 2 tbsp coconut yogurt
- 1 tbsp maple syrup
- 1-2 tbsp almond milk

- Preheat the oven to 375ยฐ. In a bowl add all dry ingredients and mix together (oat flour, spices, salt, baking powder, and baking soda).
- Then add wet ingredients to the bowl (yogurt, APPLESAUCE, flaxseed eggs, maple syrup, almond milk, vanilla extract, and apple cider vinegar).
- Mix with a spatula until it becomes a thick batter. In a greased loaf pan spread half of the batter.
- Then spread half of the chopped apples and coconut sugar on top. Spread the rest of the batter and top with chopped apples, coconut sugar, and pecans. Bake for 45-60 minutes or until a toothpick comes out clean. Let cool before slicing, top with yogurt frosting, and enjoy!
