Apple Sauce Carrot Loaf Cake

Ingredients
- 3 ½ cups flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 Tablespoon cinnamon
- ⅛ teaspoon ground ginger
- 6 eggs
- 1 ½ cups vegetable oil
- ½ cup North Coast Apple Sauce
- 4 cups grated carrots
- 2 cups brown sugar
- 2 teaspoons vanilla
Instructions
- Preheat oven to 350° and line the bottom and sides of two loaf pans with parchment paper, spraying any parts that are not covered with non-stick cooking spray.
- Whisk together the first six ingredients (all dry ingredients) in a medium size bowl. In a large bowl, stir together the remaining ingredients until smooth and evenly combined. Stir the flour mixture into the carrot mixture until combined. Do not overmix.
- Pour into prepared pans and bake for 1 hour or until a toothpick comes out clean. Do not overbake.
