Using an emulsion blender keeps the dressings from separating in the fridge and makes the flavors in the ingredients more pronounced. All these dressings will store well refrigerated in a mason jar for up to a week.
CITRUS DRESSING

- 1 small shallot finely chopped
- 3 tablespoons fresh lemon juice
- 2 tablespoons fresh orange juice
- 1/4 teaspoon finely grated lemon zest
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 2 tablespoons North Coast Organic apple cider vinegar
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions

AUTUMN VINAIGRETTE

- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic minced
- 1/4 cup sage leaves torn
- 1/4 cup basil leaves torn
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
