Pineapple Bacon Coleslaw Recipe
This pineapple bacon coleslaw is a sweet, smoky, and tangy twist on classic coleslaw. Ingredients
Dressing
- 1/3 cup of plain yogurt
- 1/2 tbsp olive oil
- 1 tbsp North Coast Apple Juice
- 1 tbsp North Coast Apple Cider Vinegar
- 1 tsp salt
Cole Slaw
- 3 cups of thinly shredded cabbage
- 1/2 cup chopped green onion
- 1 cup shredded carrots
- 3 TBSP fresh cilantro
- 1.5 cups sliced fresh pineapple
- 1/2 cup finely chopped radishes
- 1 cup chopped cooked bacon
Instructions
- Heat oven to 350 and bake bacon on a baking sheet for 15 min. Remove from oven and let cool. Chop into small pieces.
- Combine all dressing ingredients and set aside
- In a large mixing bowl, toss cabbage, green onion, carrots, cilantro, pineapple, and radishes.
- Toss coleslaw with your dressing until thoroughly coated. Add bacon and toss again. Finish with some cracked pepper and transfer to a serving bowl.
