Ingredients:
Dressing:
1/3 cup of plain yogurt
1/2 TBSP olive oil
1 TBSP North Coast Apple Juice
1 TBSP North Coast Apple Cider Vinegar
1 tsp salt
Cole Slaw:
3 cups of thinly shredded cabbage
1/2 cup chopped green onion
1 cup shredded carrots
3 TBSP fresh cilantro
1.5 cups sliced fresh pineapple
1/2 cup finely chopped radishes
1 cup chopped, cooked bacon
Directions:
Heat oven to 350 and bake bacon on a baking sheet for 15 min. Remove from oven and let cool. Chop into small pieces.
Combine all dressing ingredients and set aside
In a large mixing bowl, toss cabbage, green onion, carrots, cilantro, pineapple, and radishes.
Toss coleslaw with your dressing until thoroughly coated. Add bacon and toss again. Finish with some cracked pepper and transfer to a serving bowl.
