Popcorn is not only for the movies. This delicious Caramel Apple Popcorn can be enjoyed at any time of the day, and made with raw honey and apple juice instead of corn syrup so you won’t have to worry about the added sugars and calories!

Ingredients
1 cup popcorn kernels (makes approximately 32 cups of popped corn)
1 cup raw honey
1/4 cup brown sugar
2 teaspoons vanilla extract
1 cup North Coast apple juice or cider
1/4 cup butter
1 teaspoon ground cinnamon

Directions
Preheat the oven to 350Ëš. Place the honey, brown sugar, vanilla extract, apple juice and butter in a medium saucepan. Turn the heat to medium high and simmer, stirring occasionally until the caramel sauce reaches 240Ëš on a candy thermometer, or the firm ball stage. Remove from heat, stir in cinnamon and then pour over the popcorn. Use a spatula to toss until all the popcorn is coated evenly. Spread evenly onto a parchment lined baking sheet and bake for 15 minutes, stirring halfway through. Use the spatula to loosen and lift the popcorn into a large bowl.
