Ingredients:

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon zest

1/2 cup North Coast Organic Apple Sauce

1/4 cup fresh lemon juice

1 cup fresh or frozen blueberries, plus more for glaze

Glaze:

1 cup powdered sugar

1 tbsp fresh lemon juice

2 tablespoons blueberry juice (from crushed blueberries)

Directions:

Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the eggs while mixing and continue mixing until incorporated. Add in the vanilla, lemon zest and North Coast Apple Sauce.

Gradually add the dry ingredients and the lemon juice to the wet ingredients, mixing until just combined. Fold in the blueberries.

Pour the batter into the prepared loaf pan.

Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.

Remove the loaf from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Meanwhile, prepare the glaze by whisking together the powdered sugar, lemon juice and blueberry juice until smooth.

Once the loaf has cooled, drizzle the glaze over the top of the bread.

Allow the glaze to set for a few minutes before slicing and serving.
