Apple Turnover Recipe

Warm up the breakfast table with these delicious, flakey apple turnovers. So easy to make but you'll have everyone thinking they were just picked up from the bakery!

Ingredients:

1 lb puff pastry (1 package), defrosted

3 large granny smith apples, peeled and diced into ½” cubes

⅔ cup brown sugar

¼ cup North Coast Organic Apple Juice

1 tsp cinnamon

¼ tsp nutmeg

Pinch cloves

1 tsp lemon zest

1 tsp vanilla extract

Pinch of salt

1 tbsp cornstarch

1 egg, beaten

2 tbsp coarse sugar (optional)

 

Glaze:

1 cup powdered sugar

1-2 tbsp North Coast Organic Apple Juice

 

Directions:

Add apples, brown sugar, apple juice, cinnamon, nutmeg, cloves, lemon zest, vanilla and salt to a pot over medium heat. Stir well to combine and bring to a simmer. Reduce heat to low and cook, stirring often, until apples are softened (about 8 minutes).

Stir in the cornstarch and continue cooking for 3-4 minutes, until the sauce thickens. Remove from heat and let cool completely.

Preheat the oven to 400˚ and line two baking sheets with parchment paper.

Roll out each puff pastry sheet to a 12-inch square. Cut each sheet into 4 equal-sized squares for 8 total squares.

Spoon 2 tablespoons of the filling into the center of each square, leaving a ½ inch border.

Brush the edges of the square with egg, then fold over one corner of the dough to make a triangle. Use a fork to crimp and seal the edges. Cut 3 small slits in the top of each turnover for venting. Optional: sprinkle with coarse sugar.

Bake for 20-22 minutes, until golden brown. Meanwhile, prepare your glaze. Mix the powdered sugar and apple juice together until smooth. Let the turnovers cool slightly before glazing.
