Apple Cider Ice Cream Recipe
Ingredients
- 2 cups North Coast Apple Juice or Cider
- ½ cup brown sugar
- 2 cups whole milk
- 2 cups heavy whipping cream
- ½ teaspoon ground cinnamon
- 6 egg yolks
- 1 teaspoon pure vanilla extract
Instructions
- In a small saucepan, bring the apple juice or cider and sugar to a boil. Reduce to a simmer and cook, stirring frequently until reduced to ½ cup, roughly 25 minutes.
- Remove from the heat and whisk in the milk, cream, and cinnamon.
- In a small bowl, whisk together the egg yolks. Slowly whisk in some of the hot cider mixture to temper the eggs. Pour the mixture back into the pan and return to a boil, whisking constantly. Cook until it thickens and can coat the back of a spoon.
- Strain the mixture into a heatproof bowl. Place the bowl in an ice bath and let cool to room temperature. Remove bowl, cover and refrigerate until thoroughly chilled.
- Follow the directions on your ice cream maker to freeze.
