APPLESAUCE Chocolate Cupcakes

Ingredients
- 2 cups all-purpose flour
- 1/4 cup cocoa powder
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2 cups water
- 2 cups granulated sugar
- 5 oz dark chocolate, chopped
- 1/2 cup North Coast Organic APPLESAUCE
- 2 tbsp unsalted butter (optional, to retain some richness)
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 2 large eggs room temperature
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Line a muffin tin with cupcake liners
- Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- Melt Chocolate: In a heatproof bowl, combine the chopped dark chocolate and butter (if using). Microwave in 20-second intervals, stirring between, until melted and smooth. Let it cool slightly.
- Wet Ingredients: In a large bowl, whisk together the water,sugar, North Coast Organic APPLESAUCE, vegetable oil, and vanilla extract. Add the melted chocolate mixture and mix until combined.
- Add Eggs: Beat in the eggs one at a time until fully incorporated.
- Combine: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to over mix.
- Bake: Divide the batter evenly among the cupcake liners, filling each about โ full. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Tips:
- If you want extra apple flavor, consider adding a tablespoon of cinnamon or even a bit of grated apple to the batter.
- For a healthier version, you can substitute more of the fat with applesauce, but some butter/oil is recommended for the best texture.
